Orange Cupcakes

Makes 8 Servings

INGREDIENTS

1/4 cup Natural Directions Organic Butter
3/4 cup Sugar
2 Eggs
3/4 cup Natural Directions Organic All-Purpose Unbleached Flour
1/4 cup Soy Flour
1/3 cup Natural Directions Organic Vanilla Soymilk
2 T. Almonds, toasted and finely chopped
1/4 tsp. Almond Extract
1 T. Orange Peel, grated



DIRECTIONS

Cream margarine and sugar in mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flours, baking powder and salt. Add to creamed mixture alternately with soymilk; mix well after each addition. Fold in almonds, almond extract and orange peel. Place paper liners in 8 muffin cups. Portion batter into liners. Bake at 350 degrees F for 25 minutes or until wooden pick inserted near center comes out clean. Drizzle orange icing on top if desired.

Orange Icing

Combine 1/2 cup powdered sugar, 1/2 teaspoon grated orange peel, and enough orange juice to form a thin mixture. Drizzle on cupcakes.
