Spicy Lentil SoupServes 6INGREDIENTS 4 cups Organic Chicken Broth 4 cups Organic Beef Broth 1-3/4 cups Natural Directions Organic Dried Lentils 3 T. Natural Directions Spanish Organic Olive Oil 1 cup Celery, chopped 1 cup Carrots, chopped 1 cup Onions, chopped 1 lb. Smoked Chorizo or Andouille Spicy Sausage, sliced 1-1/2 tsp. Dried Thyme 1 tsp. Cajun Seasoning 1/4 cup Sliced Nacho Jalapeños, chopped Salt and Pepper DIRECTIONS Combine chicken broth, beef broth and lentils in a large stockpot. Bring to a boil, reduce heat to low, cover and simmer for 40 minutes. Add oil to a large skillet and sauté celery, carrots and onions until the celery and carrots are tender. Remove vegetables from skillet and add to lentils in stockpot. Brown sausage in skillet, and add to lentils in stockpot. Add thyme, Cajun seasoning and jalapeños. Cover and simmer until lentils are tender, stirring occasionally. Season to taste with salt and pepper. |
